That's just not true. We understand that we can't know everything, but also can't make ourselves believe the utter nonsense religious leaders make up to explain things they don't understand either.
You seem confused about the difference between believing in something (faith can be a belief in anything not proven) and believing in religion.
It's religion athiests have a problem with. We reject the idea that religious folks have figured out the answers to the unanswerable and feel justified in claiming to have the truth in their pockets.
If you and others are unable to live with uncertainty I guess you need to believe you know things you can't possibly know. But I don't. And most athiests I know don't either.
